The quick access to responses would really help. Inline as shown by Álvaro Trigo would be ideal, but even if it was possible to see the options in the right hand side bar it would be better than having to click to open a list.
The other issue with the current method is that sometimes responses aren't the whole mail so when I select to look for the partial response I want to insert, I lose the view of the mail I'm half way through composing.

I used to use a tool like Vocus.io. It doesn't even grow up to the full functionality of yours, whereas it had one unique feature.
Inserting text into an email using the "/" command.
Let me throw in a link to this functionality:
You have templates at your soft, however this insertion of text e.g. for me /delivery will inserts information about delivery options (of course it is configurable).
Emoticons are under the ":" - so it can be something other than "/" for this functionality.
However, this is a great speed-up for emails - even more so than templates.

Allow us to add tags to canned replies to quickly preview them in a conversation while composing a reply.
Let's say we have different canned replies related to "Sales" so maybe "Sales - Not workable", "Sales - Missing information", etc.
We could add a shorthand tag for each reply like "sales-nw", "sales-info", etc.
Then, when writing a reply we could simply start typing "!sales-..."
.... and two things would happen.
1) A small menu would appear above the shorthand with possible match (see picture from LiveChat UI)
2) A preview of the highlighted reply would be displayed below the shorthand

I like the idea of a # or ## to initiate a dropdown, but the Insert Response button should do what you're asking for (unless I'm misunderstanding you).
